I noticed that the version of Maestro shown on the web has a different layout and jacks on the back. My unit does not have the headset, mono spkr or rem on. The layout is also different, what else is my version missing? I assume my serial/model number is 1616-5092-0100-9712.

Yes, it looks like some some changes have been made, at least to the Maestro photo shown on their website. But if you look at the Maestro Users Guide dated Dec 7 2017 that back panel shows the same layout as my early pre-ordered Maestro (1616-5092-0100-5099). Also the current Maestro Users Guide makes no mention of the REM ON jack.
Perhaps the website photo you ran across is showing Maestro v2.0?0 -

Can you show the manual/pictures your are comparing? REM on was never on a Maestro version. That is the back panel of a 6000 radio.
If we have the wrong documents posted somewhere, I would like to get it fixed.

Ah, that is a very old computer 3D sketch. Those were never manufactured with those connections on it. Nice catch!0

How do you tell the difference between a V1 and V2 Maestro? I have searched the community, but found nothing definitive.

The third set of numbers in the serial number:
0100 - Maestro series A
0101 - Maestro Series B0 -

Functionally, nothing.
The display module in the Maestro A was discontinued, so we did a last buy for serviceability but not enough to do a full production run, so the Maestro B has a different display model, but the same display specs.
The new display required a different interface control module to interface with it and the control (knob and buttons) boards.0 -
You can also tell the difference in where the power button is located. The V1 Maestro is on top and V2 is on the left side.

So I must have a V1.5 (maybe a hybrid or a mut) as power switch on left side (indicative of V2), serial number 2118-3389-0100-1234 (indicative of V1) ordered at Hamvention 2018 and received a week ago yesterday. Color me confused...
