I see in the API that adding an amplifier is as follows:

C[D]<seq_number>|amplifier create ip=<ip_string> port=<port> model=<model_string> serial_num=<serial> ant=<radio_ant:amp_ant,...>

And I also see in FlexLib that "remove" is somehow used to remove an amplifier but I have not been able to find the right combination of commands to make it happen.

What command string do I send to the Radio to remove an amplifier that was created by the "amplifier create ...." string above?

Today, there is no amplifier remove command since the amplifier is removed when the amplifier client is disconnected.

The amplifier create command creates a binding between the connected client that created the amplifier and an amplifier structure in the radio. This allows that 'client' to send/receive meters, prevent the radio from transmitting with an interlock through the API etc. When the client disconnects from the radio, the radio removes the associated amplifier structures.
