I bought a used DEMI 144-28 25Watt transverter, seems to be functioning ok on the bench.

This is an older unit with relay switching is anyone using these units for digital, specifically FT-8?

I have a pair Q5 Signal transverters (2m and 70cm) (same as DEMI) that I use just about every day for FT8. Both of mine are 25 watt versions and I use separate amplifiers with each one so I don't typically run the transverters are more than about 10watt output. They work great!

There should be no issue with it. I use the VHF, UHF on a 28Mhz IF and the 5 Bander on a 50Mhz IF daily.
