Delay annd latency running remote

I was using my 4G cell phone as internet provider over WiFi for my Maestro, running SSDR 2.0.17. Works great, but I realised despite quite low latency (as reported by Maestro) the true delay was up to 2 seconds. I verified this by listening on a separate receiver... and also noticed speaking in the microphone, it took like "1001 1002" until the MOX turned red on my Maestro. Why would I see such long delays, whilst the reported latency was like 200 ms?
Is there a difference between TCP and UDP latency?
