What you are looking for is the 6400M/6600M user guide.

Until new documentation is available, the 6000 series documentation is more than adequate to get you going.
The M version front panel and the Maestro are essentially the same thing, so there is not a separate manual for each.
The hardware manual will change (GNSS antenna is new), but most things are still valid.
At the moment, there is very little difference in the functionality of the 8000 vs. 6000 series radios. What is new is the potential for new things (Adaptive Pre-Distortion, faster/better noise reduction, etc.).
Spending some time with these manuals will make your initial time with your new radio much more pleasant. I had to wait a few weeks for my 6400 when I bought it in 2020. I spent that time going through all of the manuals. When I got the radio, it was a real joy to operate because I wasn't hunting around for how to do the basic things.
Best of luck, and I hope you get your new rig soon!

If you go to the Flex Radio website (https://www.flexradio.com) and click Support>Documentation at the top it will take you to all of Flex's documentation. Search for what you want in there. For example here: you can find their "Flex-8000 Family Quick Start Guide". There are also documents for SSDR, Maestro, etc. They may not have updated the hardware specific documents yet as the whole 8XXX story is still coming together as you'd expect. So you might find the most recent 6400 manual the most applicable for your case at the moment. But it will be pretty close for now.

Thanks so much to all that replied. I did find the 6000 user guide and will have to use that until they get the updated 8000 out. I understand they operated the same.1

The hardware reference manual for the 8000 is now available.

The Flex manuals are the best ham radio documentation I’ve ever used. Most others are mostly reference, like trying to learn a language from a dictionary. Flex is much closer th a how-to procedure document.

when can we expect proper documentation for our 8600M ???

If they are so similar then why dont they do a quick fix and release it? I guess the Aurora would likewise be without proper documentation. Oldtimers probably can make the transition easily. Us new customers not so, and are appaled that such high end equip would suffer so.
