How do I get the display to re-centre or stay in the middle when I am tuning the 6600?

Hi Ray, I think staying in the middle is unlikely because the centre relates to the IQ Stream frequency which is changing as you tune past the panorama edge. I suppose you might be asking how to avoid that but I doubt you can, though someone here may know more than I.
A manual re-centre by one click of the mouse is possible with 3rd party software such as Autocentre by K9DUR https://k9dur.us/downloads/SDRAutoCenter/SDRAutoCenterSetup.exe
