Where is the option to choose categories

Three related questions:

1) Where is the menu to choose which categories I receive email from ? I've done it before, but I just can't find it now.

2) When we do get an email, is it possible to figure out from which category it originated?

3) Is there a suspend option to stop all emails for a specified time?
