I assume touch and hold your finger to the screen for an extended period.

Tap and hold on a Maestro 1 just give the "Create Slice" and "Create TNF" options with version 2.1.30 !

That was a typo in the doc. Tune Guides are not supported on the Maestro; there isn't fine enough granularity from your finger on the touchscreen to make it work accurately.

Im only getting Create Slice and Create Tnf on maestro as well, but its cool on the Smartsdr. Also love the shading

Dell does sell a small point touch pen that works on the Maestro (since I understand the first version has a Dell tablet as the display). I use that to touch the screen and control instead of my finger. It does have enough granularity to make the Tune Guides useful. Additionally, I have not seen the iPad app changes yet. But the Ipad pro also has a small tip touch pen and granularity should not prevent making Tune Guides useful.
Notice the white dot on the Maestro screen shot below. That is the pointer guide indication.
Since you built it into the software and it needs to be turned on or off as selected by the user it would have been nice if you had extended the same possibility to those of us that do not operate the Maestro with our fingers. If you use your fingers then just do not turn it on. If you use a device like the Dell pen then turn it on and use it.

Of course another alternative is to finally turn on the Bluetooth support on the Maestro so that we can use a BT mouse to navigate and other BT devices to make the Maestro all it should be.
