I'm considering building a shelf to place my computer monitors on top of my 6700? The 6700 would be open to its front and rear. How much clearance does it need on the top and on the sides for adequate cooling?

Air is pulled to the sides and exhausted from the rear.  You should have 1" clearance to the sides.  It doesn't matter to the top and bottom as no air flows there.

My 6300 has always sat under a shelf holding equipment above. Like yours, it has about 6 inches above, 2-3 on each side and is open front and rear. Recently, I placed a laptop cooler underneath the 6300.. It works without complaint.

As per the FLEX-6000 Hardware Reference Guide you need 2" on each side.
